How to Cook Bo Kho |
Bo Khoa is varied as the recipe varies from region to region. But personally, the southern takeaway is the most vibrant and tasteful. People eat bo Khoa with sharp baguettes, rice or flat rice noodles and usually a touch of lime juice, which makes the food even more satisfying.

Required ingredients are:
600 g of beef
400 g carrots
white wine
1 tablespoon cornstarch mixed with water (thickener)
Thai basil leaves, tall coriander, rice paddy herb
3 stems of lemongrass
3 full star anise
¼ teaspoon of cinnamon powder or cinnamon stalk
Ginger, 1 tablespoon ground onion, 1 teaspoon ground garlic
coconut water
Annatto seed oil or other neutral oil

Sugar, salt, pepper and five Chinese spice powders
Phase 1:
Prepare the beef. Powdered ginger and mix it with white wine, then rub the mixture with beef. Let it sit for about five minutes until it smells more neutral. Rinse well with warm water and cut into 1½ inch pieces.

Step 2:
Rinse carrot, peel and cut into 1 inch pieces. Combine beef, 2 teaspoons salt, 1 teaspoon sugar, 1 teaspoon Annatto seed oil, 2 teaspoons curry powder and 1 teaspoon Chinese 5-seasoning powder in a bowl. Mix well until smooth. Protect the marinade for at least an hour or two.

Step 3:
Heat the oil in a pot and add the minced onion, garlic and ginger. Pour beef mixture and stir-fry slightly. Then add the coconut juice until the beef is completely soaked. Finally add the lemongrass, star anise and cinnamon powder.

Step 4:
Boil the beef. Make sure you grease the surface. Lower temperature to medium to low. Cover and cook for 35 minutes. Make sure to taste it as it boils, and add more salt to enhance flavor or pour a little water to lighten the taste.

Step 5:
Add the stewed meat until the beef is tender and tender (close to the finished product), adding the carrots by adjusting the heat if needed. Cook the beef uncovered until both the carrots and the beef become tender. Remove lemongrass and star anise before serving. Move to serving dish and garnish with herbs.

And there it is! Bo kho is rich looking, very crunchy and full of beef. Half a crispy baguette and a daily Vietnamese breakfast is ready!
